AVOCADO TOAST

Welcome to The Insider Creative Recipe Corner. The more you get to know me, the more you will learn that I am no cook. I have no interest in it. But I love simple, yummy recipes that don’t require me to be even vaguely competent in the kitchen.
Today, it’s avocado toast - best enjoyed on a Sunday morning with a hot cup of coffee and the papers.
This is not my photo, and someone’s added radish and cress on there - I’m not sure I agree with this, but go to town if you want to.
Ingredients
Seeded Sourdough bread
A dollop of mashed avocado
A squeeze of lime
A sprinkle of fresh chilli
A pinch of salt and pepper
* Please note, some people add a poached egg on top - only do this if you are confident you can poach an egg and keep it runny.
METHOD
Slice your sourdough (do not buy it ready sliced) and add to a regular toaster on a low setting. You want the bread to be crisp but soft.
While your sourdough is toasting, get a ripe avocado and scoop the insides into a bowl. Mash roughly with a fork until the consistency is a little bit smooth, and a little bit lumpy.
Place your slice of toasted bread on a plate and spread the mashed avocado evenly. Squeeze half a lime over the avocado and follow with a sprinkle of chilli and a pinch of salt and pepper.
